Epic Omelet

Well, I definitely cut it close this morning!

But despite my laziness I got up and dressed in time to meet my running partner for today.

One of my favorite people to run with is my brother Brian because like me, he has asthma. When we run I never feel guilty about having to stop and catch my breath and we can vent together about how much it sucks stinks not being able to breath. He also pushes me much harder than I push myself which is always a plus!

We did a quick 2 mile run today because it was getting very hot (supposed to be 80′s today!) and hot weather and asthma just do NOT mix.

  • Be out of bed and dressed by 10 am
  • Run at least 15 miles 7/15

When I came home I used Nolan’s weight bench and did a few reps with 45lbs, and some skull crushers. My wedding dress is strapless, and my arms are in desperate need of some toning.

Post workout I made myself an epic omelet if I do say so myself!

Epic Omelet:

  • around 2 eggs worth of egg beaters
  • a handful of fresh spinach
  • diced tomatoes
  • 1 slice of Oscar Mayer turkey bacon
  • the rest of the leftover asparagus
  • and 1 wedge of Laughing Cow light Swiss cheese

This baby would barely close. So yummy and chalk full of protein!

Well I am off for the day. Stay tuned for day two’s Free Fun activity(s) :-)

What is your favorite post-workout snack/meal?
