At the beginning of the week we usually cook up a few chicken breasts to just have in the fridge for last minute meals. This came in very handy for today’s lunch: Homemade chicken salad.
Chicken Salad:
- Leftover dices chicken breast
- a stalk of celery
- 1 tsp yogurt dip
- salt and pepper
One of my buys at Trader Joe’s last week was a delicious Mediterranean Yogurt Dip.
It is an incredible dip and it’s relatively healthy
It made the chicken very moist and gave it a ton of flavor. With some help from my Magic Bullet …..
Lunch was served!

After lunch I met Kara for today’s Free Fun. Last week when I was at Trader Joe’s I saw a sign advertizing their free beer and wine tastings so today we headed over!
They were giving out samples for a local Merlot today. I don’t usually like red wine but this was really good!
While we were there we also helped ourselves to samples of a sharp cheddar cheese and BBQ meatballs.
I love TJ’s.
We also picked up some supplies for our playoff hockey spread this afternoon. It’s game 5 tonight in the Bruins playoff season.
We have a bread bowl of healthy veggy dip made with Chobani yogurt, a cheese plate, Pineapple salsa, homemade corn tortilla chips, and homemade guacamole. DE.LISH.OUS .
Go Bruins!!!!
