I didn’t think I could feel worse than I did yesterday health wise until I woke up this morning. The scale and I are fighting because apparently I’m up like 5 lbs from yesterday. Hmmm…. maybe last night’s cookout has something to do with it

Getting off to a strong start, we are using one of Nolan’s birthday presents for a nice home cooked meal.
We love our crock pot meals, but the one we were using was only 2 quarts. We were going to use our wedding registry to get an “adult” crock pot, but we decided we just couldn’t wait any longer! We modified a recipe we found in a crock pot cookbook based on the ingredients we had on hand for tonight’s dinner.
Crock Pot Fiesta Pulled Chicken
The ingredients
- I can Trader Joe’s organic black beans (drained)
- 1 can diced tomatoes with green chilies
- 1/2 jar of black bean and corn salsa
- 1/2 can corn (not photographed)
- Splash of apple cider vinegar (not photographed) – this helps the meat pull apart more easily
- 4 large skinless chicken breast
Cooking Directions:
Throw all above ingredients into crock pot. Add desired spices (we added cayenne pepper and black pepper).

6 hours later it should look like this…..
Now, we live in an apartment building and when I got home today I opened the door to the building and was immediately hit with the incredible smell of this meal! I kept thinking “That better be my dinner!!” Our entire apartment smells like a Mexican restaurant. On the side I made some Jiffy cornbread. I love this flavor combo.
Nolan and I both agree that this recipe HAS to go into our cookbook.
We started this collection of our favorite kitchen creations last year so we could remember our winning dishes. This was a very successful meal and the best part was coming home to a cooked meal. We have tons of leftovers thanks do our gigantic crock potÂ

Your dinner looks delicious! The same thing happened to me this morning…3 lbs up from yesterday morning! Just remember its the weight of the food not actual weight on you. It’s as if you put rocks in your pockets and stepped on the scale.

Oh man that looks awesome! So weird because I just bought all the ingredients for basically the same meal after seeing it on skinnytaste… and I never buy ingredients for meals. Now seeing yours I will have to actually follow through with the meal! Love the cook book too:)

I have never heard of skinny taste! I just checked out the web site and I can tell I am going to use this a lot! We don’t typically but ingredients either but sometimes it’s definitely worth planning ahead!
