WIAW: Summer Staples and Spa Giveaway

I cannot believe it’s August! With a new month comes a new theme for What I Ate Wednesday!

This summer I have certainly fallen into a food and fitness routine. I have been enjoying:

  • summer salads and omelets with fresh produce from our farm share
  • grilling
  • frozen treats
  • outdoor running at Cushing Park,
  • occasional water workouts

I recently updated my Summer Bucket List!

I have made a decent dent but I still have a ways to go. I know for sure t hat I will be able to cross a few things off the list in a few weeks. :-)

**Onto the food!**

BREAKFAST:

Blueberry waffles with mixed berries and a delicious cup of raspberry chocolate coffee!

POST WORKOUT SNACK:

Another Cucumber Melon Madness smoothie!

LUNCH:

Let’s play a little game called Summer Salad Scavenger hunt! Can you spot all the ingredients?

            Salad:

  • romaine lettuce
  • cherry tomatoes
  • carrots
  • green peppers
  • green beans
  • cucumbers

It is topped with leftover tuna salad and a drizzle of lite Caesar dressing. With the exception of the tuna, every ingredient in this salad came from fresh from the farm!

SNACK:

DINNER:

Dinner was a new recipe and a VERY successful one. O.M.G.  I pulled out some leftover haddock and decided to stuff it with some deliciousness.

I will post the full recipe tomorrow but trust me when I say it was super easy and probably the best fish dish I have ever made. EVER.

DESSERT:

During the summer, I cannot live without my frozen treats! At 100 calories a piece, these Italian Ices have been coming in handy!

Summer is also a time for relaxation! In honor of recently acquiring my 400th reader and completing me 200th post, I am hosting a little summer relaxation and wellness giveaway!

    That smoothie looks so refreshing – I’ll have to blend one up sometime! Seeing the Italian ice brings me back to my elementary days and their wooden stick “spoons”…gahhd, I love those :)

      Those wooden sticks were great! I wish they included them in the packaging because the spoon is just not doing it!

    those luigi ices are my dad’s favorite thing in the summer! and the coffee does look delicious. i used to stock up on pb + chocolate coffee beans when we went to lancaster every year. i haven’t gotten anything crazy in a while.

    i’m pretty sure i’d go for a massage if i won a spa gift card. i had one this summer, and it was amazing.

      Those are two very smart things to stock up on! Coffee and chocolate are two of my favorite things so any combo of the two is heaven!

    I would treat myself to a pedicure with that gift card – this summer I’ve been attacking the Jillian Michaels DVDs, and they have RUINED my feet!

    I certainly need a mani/peti but I’m not sure 25 would be enough to cure my feet bahaha. They are ridiculous. What an awesome giveaway! :-)

      I’m right there with you. I have tiny feet and they are always terrible because they are built to support 8 yr olds, not 100+ pound 25 yr olds!

      My Magic Bullet is my favorite kitchen appliance! We make EVERYTHING in it. So worth the $$

    second of all: we surely share a true love for Eric Northman, I just mentioned him in one of my last blog posts actually <3 (I am a little bit embarrassed that he makes me sound like a 13 year old girl all over again hahaha) .. during summer, I also love love love frozen treats .. froyo or plain frozen bananas with almond or peanut butter …yummm! in winter it does get quite cold in Austria so I need to stay away from all frozen goods then, but you are from Boston right? so you should have the same idea of what winter is like brrrrr .. and lastly: I love your blue skirt in the pic on your side bar!!       Our winters are certainly brutal but no matter the weather, I always love a good frozen treat!

    Your eats look delicious! I love smoothies and fresh salads in the summer!

    Life has been pretty stressful lately and I would definitely use it on a massage!

    I would give the card to my sister if I won.She is very into trying new spas and she has been so stressed out lately from working so much as a PR rep at a resort :( i want her to use it for a pedicure or something relaxing because she deserves it !
