Ugh this week needs to be over! This weekend my friends and I are heading to the Cape for my bachelorette party and I cannot wait!
This week I have been stressed and very overly emotional. Unfortunately, Nolan has received the brunt of my spasticness -yes I’m also making up words now- and as always has handled it with grace. I just love him. 🙂 For some reason I just woke up in a terrible mood yesterday and simply could not shake it until about 6:00pm.
So imagine my excitement when I came home after job #3 to the sounds and smells of a busy kitchen.
In my honest opinion, there is nothing sexier than a man slaving over a hot stove. 😉
He knew I had been a little blah all day so he decided to whip me up some comfort food.
“Fried” chicken strips (which he baked for me 🙂 )

Ugh sooooooo good! I took a recipe out of KFC‘S playbook and assembled myself a famous bowl! For those of you who have never had one, they are incredible and very addictive. I lived on them in grad school! (Hence the 20 pound weight gain I encountered.)
(From the bottom up): A biscuit, a layer of mashed potatoes, a layer of vegetables, chicken strips topped with a bit of gravy.
It was heavenly. Absolutely heavenly. The biscuit soaks up all the gravy and delicious chicken juices and everything blends together in a bowl of heaven. I could feel my stress and blahness -yes still making up words- drifting away with every bite. 🙂 There is certainly something to be said about food that sticks to your ribs and hugs you from the inside out!

Ok so here is the amazing stuffed haddock recipe I made earlier this week. I’m telling you, its super simple to make and most of you probably already have the ingredients in the back of your pantry. Served with a glass of white wine, this could be a very fancy meal to serve to someone special. 🙂
I used Trader Joe’s fried onion pieces.
Everything sauteed and mixed together
Stuffed into fish
Dinner is served!
