Chicken Soup for the Soul

Hey there. Hope your Monday wasn’t too terrible.

Last night Nolan and I made some chicken soup in the crock pot for dinner. We threw in some frozen chicken and some assorted vegetables we had from our last farm share of the year.

Holy carrot, right?!

             Chicken Soup

  • 2 frozen chicken breast
  • 2 large carrots
  • 2 small onions
  • 10 finger potatoes
  • Dried basil
  • Assorted spices

Simple but delicious. In my opinion, chicken soup is not something that should be over analyzed and modified. Keep it simple.

Threw it all in the crock pot and about 5 hrs later, it was ready. At the last minute I threw in a handful of Swiss chard we had to give the soup some color and vitamins. I don’t think chard tastes like anything so why not add it in and reap the nutritional benefits?

Soup and a ghetto grilled cheese. (bread with cheese and tomato microwaved.)

Delicious. Chicken soup always warms my whole body and makes me feel better.

Ok, so I don’t mean to be a pain, or one of those people who bitch about things and then never follow through but I need to address some things for my own accountability. Two weeks ago I posted about my current weight struggles because I’m, for lack of a better word- lazy.

Let me first say that I am someone who has to sit on a good idea for a little while before taking action. If you remember, I hadn’t worked out in almost 4 months and it really came back to bite me in the fat ass. I am sure majority of you have noticed that I am still eating as terribly as ever and I just wanted to let you all know that my pants still laugh at me when I try to zip them.  I am not magically losing weight because I posted about losing weight. Unfortunately that’s not how it works. I have started running again, but still no where near where I should be.

Sunday: 5 K

Monday: lazy day

Tuesday: 3 miles at Cushing

Wednesday: Lazy day #2/ trick or treating

Thursday: 2 mile run on the treadmill and 2 hrs of volleyball

Friday: 2 mile run on Treadmill

Saturday: Lazy day #3

Sunday: 10 miles on stationary bike

Obviously it’s better than nothing, but my lack of diet change pretty much made it all null and void.

After a fight with a pair of jeans, and seeing some very unflattering pics of myself from the weekend the switch finally went off. I knew it would eventually. ;-) I am 100% committed to getting back into the shape I was at the beginning of the summer in a happy and healthy way. (no pills or puking.) GO TEAM!
