I cannot believe that Christmas is less than 2 weeks away! I have soooo much shopping to do. Ok, while I ponder how to tackle my Christmas list, here is this week’s What I Ate Wednesday!
Breakfast:
Microwaved egg puff with spinach and bell peppers and a slice of Arnold Fiber Bread with some PB2!
These Pyrex bowls are so perfect for microwaving eggs!

Organic Roasted red pepper soup from TJ’s
Someone brought in trail mix and left it in the teachers’ room! It was a perfect afternoon pick me up.
Dinner:
For date night last night, Nolan and I headed to Bertucci’s! Bertucci’s is always a great go-to restaurant. Amazing bread and decent prices and portions.

I had the Baked Tortellini and Chicken Gratinati -Tri-color cheese tortellini tossed with chicken, tomatoes, cream, ricotta, mozzarella and Romano cheeses then baked in our brick oven. 13.99

The chicken was very tender and paired well with the pasta and sauce. I am a huge filled pasta fan, so tortellini is always a winner for me.
DESSERT:
After dinner, Nolan took me to Sweet Spot for dessert. He had never been there before so I was so excited to share this important experience with him.
I have only been to this self serve frozen yogurt shop once sine it opened over the Summer.
Right now, they have a ton of seasonal treats so I went with Cinnamon Bun low fat fro-yo, and topped it with Oreos, cookie dough, and toffee pieces!!!
The yogurt seriously smelled and tasted like the Cinnabon store. lol
It was such a perfect ending to the day.

Looks like you had some good eats! We had awesome turkey burgers for dinner last night so that was a FAV! I haven’t started shopping yet either, CRAP!

How do you make the egg puff in the microwave?? This may change my life, and I may be living under a rock if this is what many already do…
Scramble eggs with a little bit of milk in a microwave safe bowl (I use glass Pyrex). Add any ingredients (I use frozen veggies) and microwave on high, about 1 1/2 minutes for every egg you used. It’s so quick and simple, and very little clean up. Careful though, it’s VERY hot when it comes out.
