Omelet Casserole

Since Nolan and I started doing our date nights we are trying not to eat out on the weekends. We tend to go out for breakfast many weekends, so instead, we have been trying out new recipes and techniques when it comes to cooking breakfast.

One of my latest creations was an omelet casserole!

I used a non stick pan so it came right out of the casserole dish.

The eggs that were around the edges got a tad crispy, but the insides were light and fluffy!

This breakfast was a nice alternative to the traditional omelet or egg scramble. It actually held us over for 2 days and it tasted just as good reheated. I’m excited by all the possible versions of this casserole!

    That looks a lot like a crustless quiche which is fine by me! I love eggs! LOL

    Yum! I had a similar dish yesterday with feta and carmelized onions!

    Yum, I love the sound of this and how easy it is! My hubby is weird though, and won’t eat “baked eggs” or “reheated eggs”, including quiche. I don’t get it!

      hmmm, that’s too bad. Luckily my hubby will eat anything covered in hot sauce haha

    Love crustless quiches! If you cut and portion, they freeze really well too. :)
