IDK what I’m more excited about, the fact that it’s almost the weekend (a long weekend thanks to MLK) or that I made it through the week without getting sick! I’m telling you, this flu has people at school dropping like flies. Between the poorly ventilated classrooms and the poorly sanitized kids, a school is always a breeding ground for sickness.
But in all seriousness this week went by with lightening speed
On a sad note, my ipod broke and it’s very depressing and unhealthy because obviously I cannot go to the gym without it. I mean, do my legs even know how to run without a beat playing in the background?… I’m not willing to risk it. But in all seriousness I hate being able to hear myself breathing when I exercise. I suddenly become way too aware of it, and I always end up needing to use my inhaler.
I ended up riding my stationary bike at home while listening to itunes, but the workout just wasn’t the same. I put in a lot more effort when there are others around me silently judging me.
However, since I was home earlier than usual I was able to put together a great dinner. I didn’t follow a recipe, and it was a total whim, but it was sooooo delicious!
Basically all I did was take two boneless/skinless chicken breasts, a handful of baby carrots, and 3 red potatoes, throw them into a casserole dish, cover them with basil and Montreal Chicken seasoning and about a cup of chicken broth.
I started cooking it at 375 for about 25 minutes, but the chicken wasn’t anywhere near done. I eventually smartened up and covered it with tinfoil and that worked wonders. So if you are thinking of making something similar, cover it with foil! Also, every 15 minutes or so, take it out and stir the vegetables around so they cook evenly.
Since the chicken was cooked in this shallow dish, it literally cooked in it’s own juices and stayed so succulent and flavorful. (I did trim some excess fat before cooking) Nolan and I typically argue about the degree of cooked-ness when it comes to chicken. Like all my meats, I like it undercooked because I think it gets way too dry too easily, and Nolan is always worried about this crazy thing called salmonella? He’s such a worrier. LOL Long story short, this recipe gave us the best of both worlds. The chicken was well cooked and nowhere near dried out.
Nolan was so impressed and satisfied with dinner that he actually cleaned up the kitchen and did all the dishes!!!
So worth it.
