…Great Balls of Cheese!

Good morning all. I’ll tell ya, its so much easier to get out of bed when the sun is shinning and birds are chirping. I can tell today is going to be a great day. AND it’s the first reinstated Date Night! We took a small hiatus from our weekly date nights for several reasons but now that everything is settling down and Nolan’s back to work, they are back on and I couldn’t be happier!


You ever go through phases where you love foods, and then phases where you hate them? Hummus and I have  love hate relationship. Lately we have been on the outs but the last time I went shopping I suddenly got a craving for it!


This roasted red pepper hummus went perfectly with my cucumbers, peppers, and celery.

I also enjoyed a generous portion of this leftover buffalo shrimp mac and cheese that Nolan’s step dad made for the cookout. It has giant chunks of shrimp and jalapenos in these creamy cheesy noodles. YUMM

Dinner was one of my favorite meals! Trader Joe’s Taco night!


Tacos have always been a favorite of mine because of all the fresh and diverse flavors and textures that all come together in one dish.

I made a giant taco salad with all the fixin’s in an edible bowl.


One of my biggest weaknesses is spacial awareness, so I can NEVER stuff a taco shell or fill a burrito appropriately. With these bowls I don’t have to worry about over stuffing. 🙂IMAG5428

I scarfed down my food because we made plans to stop by and visit this little peanut!

Ugh soooo adorable. I couldn’t be happier for Ashley and Shawn.

Believe it or not, this is the first pregnancy I have witnessed up close from start to finish, (that I recall) and I’m still in amazement. Amazement, but not inspiration. 😉


So I went shopping at Trader Joe’s the other day…and I went a little crazy per usual. I went right after work, before dinner so my appetite really took control of the cart!

I was so excited because I finally found the vegetable bird nest’s that I had been searching for the past month or so! They inspired me to put together an appetizer menu for dinner!



I decided to pick two other bite size treats which I had never tried before.

PicMonkey CollageUnfortunately I “messed up” because none of these had any meat in them so Nolan threw a bit of a fit. But fear not, he managed to eat anyway. 😉

My favorite was definitely the veggie nests! They are basically veggie tempura, minus a super thick batter. It’s like an onion ring! YUM!

 The mushrooms were good, but they were a bit soggy from being frozen. The spinach and cheese mix inside them was very tasty! I wish I could buy it by the jar to dip chips into!

The cheese bites were fantastic! I will certainly buy these again for tailgating parties. They are quick, easy, and very poppable!  And really folks, who doesn’t love a fried ball of cheese?!

    Aw cute baby ! Favorite apps are def stuffed mushrooms and spinach artichoke dip!

      Nolan’s grandfather makes unbelievable stuffed mushrooms! They are def a favorite of mine. 🙂

    Oh that corn salsa is amazing! I was going through about a jar a week awhile ago, I needed an intervention! I love a cheese & cracker & fruit plate for company, so easy & diverse!

      Confession: I came home from the gym today and while waiting for Nolan to pick me up for dinner I pulled out a fork, opened the jar, and the salsa as is……

    My go-to appetizer is simple: tortilla chips with salsa and guacamole. And or hummus and crudités.

    That taco bowl looks insanely delicious! Wow!

    My workmate Katie told me about your blog and I love your posts. I have to say Trader Joe’s is one on favorite places to shop and I love their corn salsa too!

      Aw thanks! It’s so nice to know there are people out there reading. 🙂 I am really hoping one of these days a Trader Joe’s rep will knock on my door and offer me a taste tester job!
