Happy Friday everyone! What a gorgeous week it has been. I have been taking full advantage of this weather and spending as much time outside as possible. (hence no post yesterday) Before I went to volleyball, I did a few laps at Cushing Park to soak up some fresh air and vitamin D.

Ok, time to get to this week’s favorite flavor of the week!
As I mentioned earlier this week, I was doing some blog surfing and I came across some people who were cooking new and different things. So I decided to come out of my crock pot and hummus comfort zone and prepare something new for lunch last week. I had just bought a giant zucchini from the produce market and I found a great recipe to try out!
I peeled SOME of the skin off the zucchini and cut them into about 1/2 inch spears.
I pieced together a light rub of Italian breadcrumbs, Parmesan cheese, and whole wheat flour, and a wash of 1 egg white with 1/2 a yolk and some skim milk.
I was determined not to fry them in oil because really what’s the point of eating zucchini if it’s fried and greasy? However, after baking the spear for what seemed like forever (maybe 20 minutes) they didn’t appear to be crisping up, and the zucchini was drying out.
In a last stitch effort to salvage my lunch, I gave in and fried they in a little bit of oil. By this time, a lot of the batter had fallen off in the transition, which ended up being for the best. They didn’t get too greasy and I still got that great zucchini flavor!
I served them with about 2 tbsp of fat free Thousand Island dressing (Not the best choice I know but sooo damn good) and I may or may not have polished off the entire zucchini…….
As for what I would do next time?? Well I didn’t grease the pan when I put them into the oven, so maybe that would have made a difference. Also, maybe broiling them would have worked??? I’m not really sure and every recipe I have come across does it differently. Any suggestions?
You know what really pisses me off though? I KNOW that Nolan would have been able to make them perfectly. He is so good with food, and always takes the extra time to make it perfect….a quality that I admire but absolutely do not share. 😉
