Good morning and happy Friday! Today is supposed to be the hottest day of the summer, and I am hiding in our apartment with the a.c blasting!
Yup, I’m right in he middle of that evil red area. To beat the heat Nolan and I are escaping to the Cape for the weekend. It’s about 10 degrees cooler there with plenty of beaches to seek refuge in. Hopefully the projected thunderstorms come and go quickly.
Alrighty, so this week’s favorite flavor comes courtesy of my grandmother.
She has a great soup recipe which she has been making for as long as I can remember, and after she had me over for lunch a few weeks ago it’s all I have been craving. Luckily, thanks to my fabulous bridesmaids, I have a yummy collection of family recipes including, Nanny’s soup!
It’s a pretty simplistic recipe which is perfect for making in small or gigantic batches. I doubled the following recipe and made enough to feed a small army. Yum!
The recipe uses 5 basic ingredients so it’s fairly quick and easy to make and very low cost! I think altogether this recipe maybe cost $5, which is a huge added bonus for those of us on an unpaid summer vacation. 😉
The flavors all mesh together and the tomato soup base gives it a creamy thick texture. Although it’s thick, it’s not “hearty.” It I were making this in the winter I may add a potato or noodle to give it some more girth. I actually added a handful of frozen spinach to this bath it give it a summery touch.
Served hot or cold, this soup is just so delicious. I have also learned that it’s even better reheated the next day, when the ingredients have had 24 hrs to marry together. I have probably had this soup for at least 1 meal all week and I cannot get enough!
