Hi everyone and happy Friday! AND happy birthday to me!!!
Woo hoo! I turn 26 today, and to be honest, this is a birthday that scares me a bit. You know when your filling out info forms and they ask you to select your age range? It’s typically 18-25 yrs old and then 26- like 40. I am now in that other age bracket, the older, more mature, responsible bracket. I’m more than halfway through my 20’s which mean life has higher expectations for me. Once again, I was hoping to wake up older and wiser but that doesn’t seem to be the case. I did however wake up to this!!!
Nolan got me the best gift, a new camera!! Yup, no more blurry blog pics. And the best part? It’s blue! Does my hubby know best or what?! I am adding it to my blue possession collection which includes my blue car, blue laptop, and blue fishing rod. I cannot wait to get snapping!
Ok, onto this week’s favorite flavor.
I saw this recipe for zucchini fritters on mooreorlesscooking.com, and I immediately wanted to make them. What are zucchini fritters? It’s basically a mix between a fry and a chip. It’s a super simple, 5 ingredient recipe that takes no time to throw together.
2 cups zucchini, grated, unpeeled
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
vegetable oil, for frying
1. Mix all ingredients in a bowl thoroughly.
2. Heat the oil in a frying pan and fry like you would any other pancake on both sides.
3. Remove from pan to drain. Serve with sour cream or Thousand Island Dressing.
I was a little nervous to make these because I don’t always have the best luck with pancakes, but this “batter” sticks together so well so I had no issues. I made the first few a bit thick but by the end I got the batter ratio down and they came out thin and crispy. I like dipping my zucchini fritters in thousand island dressing, like a fried pickle! After I made them, Nolan commented that they would have been great with a little diced onion and I certainly agree. Next time. 😉 But these got me thinking, what else can I fritter?!?!? Suggestions?
