Yet again, the work week is flying by, and I am so excited to see it pass. This weekend Nolan and I are taking a little trip to Rhode Island for our 1 year anniversary. Yes, 1 year! I cannot believe we have already been married a year.
This weekend also marks 8 years since we first met and became close friends. Now, I cannot imagine my life without him!
I cannot get over how young we are! We were only 18 but totally thought we were so old and wise. HA Anyway, this weekend we are very excited to explore and eat our way through Providence! We are leaving tomorrow after work so I have a feeling tomorrow will crawl by. Ok, onto the food!
The last time we went shopping, ground turkey was 2/$5. In the past, before we got our meat grinder, I would buy ground chicken and use it in place of beef, but it just wasn’t the same.
There are two ways to prepare these meatballs. I made smaller ones, so I quickly cooked them in about 1 tbsp of oil in a frying pan for about 6 minutes. However if you wish to make larger meatballs or just be a bit healthier (I should have done this) bake them in the oven for about 20 minutes.
I was able to make about 2 dozen meatballs.
The meatballs came out fantastic, and you would never have known they were turkey with the spices that were mixed in. Always a plus! I am always excited to try out new recipes and have them be successful. I grew up in an Irish household, so Italian food was never something I saw made at home. Nolan however, knows lot of tips and tricks to mastering Italian cooking so he was a big help on this meal. My goal this fall is to make a lasagna! Ambitious but doable with my sous chef. 😉
