This week has actually been amazing as far as food goes. I have been pretty stressed and busy this week because Tasterie has been nuts. When some people are stressed they clean like crazy or workout like crazy. When I am stressed, I cook. It calms me down and helps me forget everything that’s happening outside of the kitchen. Needless to say, this week’s meals have been pretty kick ass.
Monday: Chicken Parm, Tuesday: Pulled Pork Tenderloin and Twice Baked Sweet Potatoes, Wednesday: Chicken Tacos, Thursday: Jamaican Jerk Stir Fry. On tonight’s menu? Pulled pork pizza! (getting rid of leftovers!) Out of all these delicious flavors I savored, my favorite was definitely the chicken tacos. There is something so fun about making your own taco, especially when you have all the fixins!
Ground chicken, peppers and onions, tomato, lettuce, re-fried beans, jalapenos, cheese, sour cream, homemade guacamole, corn salsa, and fresh lime. For the meat I took two large chicken breasts and actually pulsed them in my Ninja blender. This blender means business and makes ground chicken in about 7 seconds. I cooked it in the skillet with some paprika, chili powder, cayenne, and garlic salt for abut 10 minutes. It’s much healthier than using ground beef and I think it tastes better. I used a new -to-me tortilla from Trader Joe’s which were whole grain with rolled oats and flax. They each had 5 grams of fiber and only 130 calories.
I used my “Perfect Tortilla” pans to make taco bowls for my taco salad. Soooo fun!
I LOADED mine up with lettuce, chicken, tomato, peppers, onions, cheese, corn salsa, and a scoop of my guacamole. Pure heaven! I think I could seriously just eat this corn salsa out of the jar. It’s one of the best things I have ever bought at TJ’s. It was the perfect blend of flavors and textures and I definitely ate about 3 of these. (minus the bowl)
