Cranberry Turkey Salad

Hi everyone. I know it’s early but how is your week going so far? Mine has been pretty simplistic. Yesterday I worked, went to the gym, came home, and cooked some steak.

All in all, it was a good day.

I have a recipe to share with you from …like a month ago. Bad blogger! It was one of the ways I got rid of all our leftover turkey, but I think it’s going to be  an all season recipe.


Instead of wrapping this salad up and calling it a day, I decided to toss it on a bed of shredded Brussels sprouts. This proved to be a fantastic call on my part! The sweetness of the salad and the bitterness of the sprouts made for an excellent pairing. I’m telling you, if you haven’t tried the shredded sprouts at Trader Joe’s you are seriously missing out! Try them ASAP!

IMG_0568This salad would actually be great for Christmas holiday parties. Take a spoonful of the turkey mix and spread it on a Triscuit for a fun and festive canape!

Alright, time for me to get moving. Now that we have some snow on the ground, everyone drives like 5 miles an hour so my commute is taking an extra 10-15 minutes in the morning. You would think New Englanders would have their shit together in the winter but noooooo. Not the case. AND we are supposed to get another 2-5 inches of the white stuff between 1:00-5:00 tomorrow, so the afternoon commute is sure to be a blast.
