Happy Friday!!!! I am ESPECIALLY excited today because this is my last day of work in 2013. Our winter vacation officially begins today at 3:05 and goes until Thursday, January 2nd. Yes, one of the perks of working in a public school. Nolan actually took all of next week off too so we are both pretty excited!
This week my favorite flavor was something I had never ever tasted before, risotto. I have seen this dish offered on countless restaurant menus, but next to a good burger I have never thought about ordering it. On Monday I found myself in a recipe tornado. Does this ever happen to you? I clicked on a recipe for enchiladas, which brought me to a website that was featuring comfort food which brought me to butternut squash recipes, which brought me to a butternut squash risotto recipe. I had never attempted to create a risotto dish, and I knew Nolan wouldn’t eat it because there isn’t any meat involved. So when I found out he wasn’t going to be home for dinner Wednesday night, I figured this was the perfect opportunity to test out this new dish.
I totally cheated and used 2 bags of Trader Joe’s frozen brown rice. That certainly made it much easier to make, but I don’t know if you can call it a classic risotto. It took about 30 minutes to come together, and it really was delicious. It definitely looks more like a side dish but it’s really filling! I definitely recommend making this or something similar.
