Hi all, how’s it going? I’m feeling pretty great today. I have been in a great mood this week and I have my resolution to thank. I have had many small victories this week as far as discipline goes. For example yesterday at work there was a giant basket full of delicious treats in the teachers room and even though the chocolate covered Oreo’s and kettle corn were screaming my name I didn’t give in! Discipline. AND when I forgot my gym bag at home yesterday I came home and rode my stationary bike for 45 minutes instead. Discipline. Plus, I haven’t had any alcohol this year! I know it’s only been 9 days but there is always beer in our fridge and it’s way too easy to grab one to wash down dinner. Discipline. Because of these small changes I have already lost 4 pounds this year. PUMPED!
So as I mentioned in yesterday’s post, I used my leftover stuffed peppers to make a new soup which is to die for!
I basically just took all the leftovers we had and threw them in the crock pot with a can of stewed tomatoes and beef broth. Sounds simple right? It was and oh so good. This will probably be my new stuffed pepper tradition, and it got me thinking about all the types of soups I could make with my leftovers! Leftover taco soup, chicken parm soup, chicken broccoli zitti soup… the possibilities are endless. I plan to have my own line of Leftover Soups by the summer. 😉
Leftovers are typically only good for about 2 days in our house. I don’t mean they go bad, I just mean that our taste buds have a little A.D.D and after those 2 days we have moved onto the next recipe or ingredient and want nothing to do with the old. This recipe allowed me to change these leftovers into a whole new meal that we both really enjoyed.
