Hey there! I have been pretty MIA lately due to my fabulous trip to California last weekend! I used to think that jet lag was something people made up so they could be a little lazy after taking a trip but ohhhh no, that shit is real. I got back to Massachusetts Tuesday morning, and it has been so hard to get back on a schedule. It’s also hard not to fall asleep on the couch around 6:30 each night. Anyway, thank’s to my trip I have an absolutely delicious flavor of the week to share!
Many people have Bucket Lists, a list of things they hope to do or experience in their lives. I on the other hand have a Culinary Bucket List, complete with all the places I want to go and the delicious foods and flavors I hope to eat when I get there! The list includes eating crab in Maryland, crayfish in Louisiana, bbq from Texas… the list goes on. I have already crossed a few off my list like the deep dish pizza and Chicago style dog in Chicago, Lobster in Maine, lots of cheese in Vermont, and now I can cross off fish tacos in California!
As soon as I found out I was going to the west coast I had these babies on my mind and I am soo siked to have experienced them. These are three baja fish tacos stuffed with grilled mahi, cabbage, pickled red onions, 3 cheeses, avocado slices, tomato salsa, and an ancho chile cream served in hot flour tortillas. aka, food porn! There were soooo many flavors stuffed into these tortillas that I don’t think I could pick a favorite however the grilled fish was spectacular! It was cooked perfectly and it wasn’t too flaky.The key was getting a bite with a little bit of everything which was much easier said than done. I made such a mess eating these and yes, I ate all 3 of them!
