Flavor of the Week: Chipotle Cheddar Crusted Cod

Sounds fancy huh? Wait until you see how un-fancy this is. 🙂

IMG_0751Yup, I crunched up  Special K Cracker Chips and mixed them with chipotle panko breadcrumbs.  I coated the fish in an egg white to help secure the toppings and then baked the fish for about 20 minutes.



I plated it up with garlic zucchini and a broccoli rice side. I got to have my carbs!  I was pretty shocked at how AMAZING this came out. I am constantly trying new things in the kitchen and most of the time it’s delicious but this was a dish that really put a smile on my face and I may or may not have taken a bow as I served it to Nolan. HAHAHA. I’m not a crazy creative person and I sometimes have a hard time stretching ingredients beyond their means, so I was pretty damn proud of myself! 🙂


The fish was flaky and there was a satisfying cheddar flavor in every bite! And the little chipotle pieces in the panko bread crumbs exploded like spicy firecrackers in my mouth! They really complemented each other well and didn’t overpower the delicacy of the fish.
