Gooood morning! It’s a bittersweet morning, as I am headed back to work after my long vacation. I am sad to be up and dressed at 7 am, but I am excited to get back to work, see everyone, and fall back into a routine. I am also happy to report that I am feeling great, and actually got to enjoy some of my vacation this weekend, wheeze free.
I spent Saturday at the Harpoon Brewery in Boston, touring, learning, and of course, drinking!
I came home Saturday night to two very large packages! One was from Ford’s Gourmet, the makers of Bone Suckin’ Sauce, and one was from Vermont Smoke and Cure. Both companies sent me lots of goodies to try and Nolan was ecstatic at their contents! *There were at least 3 more jerky links that Nolan ate before I could snap a pic.
Sunday was laid back. I did some shopping, went out for lunch, and finally saw American Hustle.*If you have a Panera Bread near you, go and try their new Mediterranean Shrimp Couscous Salad-Baby spinach and romaine lettuce tossed with our low-fat Meyer lemon balsamic vinaigrette and signature couscous blend, then topped with shrimp, feta, kalamata olives and roasted tomatoes. I got mine without the olives of course, and it’s one of my new favorite things I have ever ordered there!
I spent Sunday night prepping meals for the week. Please note, I am not one of those people who go crazy and cook like 100 different thing on Sunday. Who has the time!? I choose 1 or 2 things to make in bulk to save some time during the week. I still have enough mixed berry scones to enjoy for breakfast all week, so I boiled a few eggs and cut up some veggies to snack on and made a GIANT batch of vegetable stew to enjoy for lunch this week. Simple. I also prepped a crock pot meal to have for dinner tonight. 🙂
