Morning and happy Wednesday!
Can’t help it. 🙂 Pretty excited to be halfway through the work week. I’m running very late this morning, so enough chit chat, and onto the main event! Here are my eats!
(1 egg + 1 egg white) and a few grapes that are really out of season and lackluster. Is it spring yet? I really miss fresh produce. 🙁 Salty, savory, and a little sweet. Great way to start the day! Oh, I also enjoyed a hot cup of English Toffee coffee! I hadn’t tried this Green Mountain flavor before and I just had to buy it when I came across it at Christmas Tree Shop. FYI: K-cups are soooo much cheaper at Christmas Tree Shop! I got 66 cups for about $30! I also picked this up at CTS. My favorite colors and it’s keeping me super hydrated.
By the time lunch came around I was craving a little spice. Growing up I was never a spicy food lover, and I don’t think I had ever tried hot sauce before meeting Nolan, the buffalo chicken king. It is safe to say that after 8 years with the king, I am a fan. I made up a batch of buffalo chicken salad using a can of chicken, 1 wedge of Laughing cow, and about 2 tbsp of Franks.
Dinner was a comfort food favorite, crock pot chicken pie.
Before I left for work in the morning I threw two boneless chicken breasts into the crock pot with 1/2 a can of cream of chicken and a cup of water. By the time I got home I had the most delicious pot of shredded chicken that was moist, flavorful,
and melt in your mouth good. I transferred the chicken into a 9 inch pie pan, juices and all, and then added a layer of frozen spinach and my favorite frozen vegetable mix from Shaw’s. It’s a mix of peas, green beans, corn, carrots, and Lima beans. I topped it with a Pillsbury pie crust and baked it at 400 for about 15 minutes, until the crust was golden brown. Oh so good. 🙂 Since the crock pot did all the work this meal took me about 17 minutes to put together after I got home.
A little while later I was craving something sweet and I had just the thing! While standing in line at the produce market I shop at, one of these caught my eye. I am a sucker for all things hazelnut, especially chocolate so I didn’t even hesitate.
OH.MY.GOSH. This mini chocolate bar transformed me to a magical place! It is seriously the best thing I have eaten in about 2 weeks. At only 90 calories, this .6 oz of milk chocolate and crunchy, salty hazelnuts made me giddy. And it was only $0.29! I wish I had grabbed like 10 of them. I definitely need to stock up.
