Farm Share Week 8 + a Recipe

Gooood morning! Today is a 180 degree difference from yesterday as the sun is shining and the sky is bright blue.  I actually have nothing scheduled today and I’m not sure how I will spend this beautiful day. I do need to do some packing because we are leaving for the Cape tomorrow evening but right now, I’m sitting in bed munching on this. IMG_1422Arnold Double Protein Bread with Laughing Cow and 1/4 of a mashed avocado. It’s actually VERY delicious!!! IMG_1423Alright, onto this week’s share.

Another week, another batch of veggies! I think this week has been my favorite batch so far. We got a ton of corn, which I am soo excited about and a lot of tomatoes, my favorite!IMG_1433Hot peppers, bell peppers, and hand picked cherry tomatoes, (I washed them off after the pic)IMG_1434carrots, potatoes, eggplant, and an array of summer squash.IMG_1435Soo many different ingredients! I always use the corn, tomatoes, peppers, and a squash or two, but if I’m being honest, I was starting to have leftover veggies from the previous week’s share, and I REALLY didn’t want them to go to waste. So I decided to be proactive and cook a recipe that used as many veggies as possible. The result? Ratatouille!

rattIMG_1437IMG_1438This dish came out really delicious and it was a great use of vegetables. Of course, you can customize it based on your taste and what veggies you have on hand. I have been looking online and there are a number of ways to utilize the leftovers which I am sure to do since we have about 1/3 of a crock pot left. Traditionally, this recipe is used more as a side dish, or served over pasta and rice. I’m thinking I may throw it over some penne for tonight’s dinner. 🙂

Okay, time to get out of bed and get moving.
