I am on a roll this week! Not only have I been in the mood/mindset to blog, but I have actually been remembering to take pictures of my food!


What I Ate Wednesday Button

This past weekend I finally got my ass off the couch and started doing some cooking. I knew this week back to work was going to be an adjustment and that I needed to do all the food prep I could to keep me on track. This week’s breakfast is a homemade quiche!


2 eggs+ 2 whites, spinach, peppers, onions, cheddar cheese, tomatoes

Morning snack: cottage cheese. Every once in a few years I decide I like cottage cheese. This is one of those times. Not sure how long it will last because the texture really weirds me out.cotttLunch went un-photographed but it looked a lot like this:IMG_0086I made a big batch of tuna salad that I have been lunching on all week. On the side I had one of my current food obsessions: steamable sugar snap peas! One package is like $1.50, takes 5 minutes in the microwave, and is a deliciously healthy snack! IMAG8540Dinner originated as this Pinterest inspired dish, but I went a little rogue and ended up with this!IMAG8542I’m calling it a Philly Cheese Steak Casserole!cheesesteakThe finished product really reminded me of the cheese steaks Nolan and I got at Pat’s in Philly last summer. I used Velveeta cheese because it closely resembled the “cheese wiz” they use on their cheese steaks!philThis recipe makes about 4 large servings, and according to My Fitness Pal, each serving is about 200 calories. Nolan chose to eat his on a seeded bun, and he added a little ketchup because he’s a weirdo.

It really feels good to be doing some food prep and spending more time in the kitchen. I have a few more recipes I’m excited to try out this week. Stay tuned!

    I’ve never been very good at prepping breakfasts other than the same old overnight oats over and over again but that quiche looks delightful! How do you reheat it?

      Quiche is the easiest prepped breakfast I think. It’s also a great way to get rid of leftovers. I just microwave it for 20-30 seconds and it’s ready to eat. The crust isn’t super crunchy this way, but if that’s what you want I’m sure you could throw a piece in the microwave oven on some tinfoil.
