Well, it finally came. From Monday night to late last night we got slammed with almost 33 inches of snow! So, for the past 2 days schools have been closed, driving bans have been in place, and everyone is trying to figure out where the hell to put all this snow!
Nolan went back to work today, but school is still closed so I am hanging out today with some hot cocoa and Netflix.
Ok, onto this week’s eats!
This week’s breakfast was something different than I had made before. Breakfast hash. This hash is a mix of shredded potatoes, scrambled eggs, lean ground turkey, and lots of veggies. It’s packed with protein and a filling way to start the day!
Over the weekend I went to Panera for lunch, and inspired by their seasonal turkey chili. So, I made a batch and have been enjoying it for lunch this week. It’s packed with lean ground turkey, black beans, carrots, peppers, onions, and tomatoes. Since I was home yesterday, I enjoyed my chili with a Winter Warmer!
This week’s snack: cottage cheese and blueberries.
On cold days, I crave crock pot creations. I threw a chicken breast in the crock pot with a can of cream of mushroom and some frozen mixed veggies and slow cooked it all day. After about 8 hrs, I pulled the chicken, put it all in a casserole dish and covered it with Pilsbury Crescent Rolls. 20 minutes in the oven this became a bubbling hot chicken pot pie. I cannot tell you how delicious this recipe is, and how simple it was to make. It really hit the spot and warmed up us.
Now that I’m home for another day, I’m trying to figure out what to make for dinner tonight. Better head to Pinterest for some inspiration! Enjoy the day.
