So this is my second year teaching. My 5th grade class last year was freaking incredible. God do I miss those kids. This year….has been rough. I have a LOT of behavior challenges and I have really had to change my thinking and the way I taught in the past. With this increased stress there are many avenues I can take. #1- drink a lot. #2-Channel that energy into something productive. Now, #1 is pretty great. Come home,
bottle glass of wine… but this is a slippery slope, especially with someone who has my addictive personality. Instead I have really been going with #2 as a way to de-stress. Luckily, Nolan is currently on a health kick (it happens every few months) so we have been running together after work (shocking to those of you who know us) and we have been cooking, a lot! So bottom line, I have lots of recipes to share. Which brings us to…..
One pot burrito bowls. I got the idea for this recipe from Courtney. It’s a combination of ground turkey, black beans, brown rice, peppers, onions, diced tomatoes, and taco seasoning topped off with some sour cream. Basically anything you would put into a burrito, you cook together in one giant bowl like a stir fry. Yummmm.
It’s also a great recipe for when you need to get rid of things in the fridge. You could toss just about anything in there and it would probably taste great!
One thing that I love about reading other blogs for recipe ideas is how much it changes my mindset. Growing up, dinner meant a meat, a starch, and a veggy. I have a really hard time putting meals together that don’t follow that pattern and can fit into one of those sectioned plates that you ate of of when you were 5.
I also have a hard time thinking outside the box when it comes to ingredients. It never would have occurred to me to serve burritos without the wrap. Narrow minded, I know.
