As we do every fall, we have been hosting friends and family every Sunday for food and football. We have tried out a few new recipes this season and pulled out some old favorites. One of the newest recipes we threw together was a big hit and super easy to make. Pulled Pork Taquitos.
We have been using our crock pot a ton this fall and we always have leftovers. In the past our leftovers have gotten thrown away but I am trying hard to freeze things or use them in creative ways. After a large batch of pulled pork, I had 1/2 a pig leftover and was determined to use it. We also always have tortillas laying around, mostly because we buy those taco making kits and we never use all the wraps. So all I did was spoon some bbq sauce, pork, and 1/3 of a slice of american cheese on a tortilla and roll them up. I sprayed the tops of the rolls with olive oil cooking spray, and into the oven they went at 350 for about 15 minutes. When they came out I drizzled them with a little bbq sauce and BAM, instant tailgating snack.
