It’s 9:30 and I am sipping coffee out of my raccoon mug with a hunk of banana bread watching the snow/sleet fall. I have no immediate plan to get dressed. I don’t mean to rub my vacation in your face, I’m just really trying to savor every minute of it because I know it will be over before I know it and I will be like “wtf did I do all week?!”
Anyway, I am rly excited about this new recipe…….
I have found my new breakfast food contribution! Up until now, whenever there is a brunch or work breakfast I always bring a quiche. Yes, they are delicious and customizable but they are a bit of work and prep. Not anymore. Now I have a new favorite breakfast dish that is sure to wow the hungry masses. Now, full disclosure: I cannot take credit for this recipe. I found it on my new favorite facebook page, Tasty. This page shows fun, easy, creative recipes being made from a birds eye view. They have cooking tips and tricks, and time saving/cost effective recipes which I LOVE. After seeing this particular recipe video I immediately knew this was what I wanted to bring to Christmas brunch with the fam. Click to watch the video of how it’s made here.
There is no prep work involved and it only requires a few simple ingredients. As you know I am not a sweets lover, especially when it comes to breakfast. Give me a plate of salty/savory bacon and eggs over pancakes any day. Because of that I did alter the original Tasty recipe a bit by adding a little less sugar. (1/2 cup instead of 2/3 a cup) Honestly, if I make this again I may even try 1/3 a cup and see how that tastes. Fresh berries have a great natural sweetness anyway so I don’t feel like lots of sugar is needed. The crescent rolls get all puffy and a little flaky and the egg mixture gives the bake a pancake like texture. It’s.So.Good. And look how pretty it is!
This was a big hit with my family and definitely something I will make next time I cook for co-workers, friends or family. Next time I may use a mix of different berries too and see how it comes out!
