Sausage, Mushroom and Spinach Pasta

That’s a bit of a mouthful, huh? Well idk what else to call it, but it was delicious. With all the classes I am taking right now, Nolan has been in charge of dinner a few nights a week since I’m not getting home until 7. He admitted to doing some Pinteresting and finally just came up with something on his own. He ended up going all Frankenstein on a sauce and I couldn’t begin to explain the recipe for that but essentially he made an Alfredo sauce, so that’s what I am including in the actual recipe. If you are someone who likes to make your own sauces, go for it, if not, buy a jar and enjoy. alfredo












It was a really delicious night! The last few weeks have been a little stressful between my 5th graders and my course load and I have been reflecting a lot on just how lucky I am to have Nolan. I have never been good at balancing the different aspects of my life, so knowing I have something so stable and unwavering at home makes the other things seem not so difficult. The 12 hour work days are exhausting, but coming home to a cooked meal and a smile is blissful. 🙂
