The last few weeks have had such a good rhythm. Exhausting, but good rhythm. I have been getting up at 6:30 instead of 7:00 which sounds awful (and was the first few days) but I have been able to relax and eat breakfast at home while watching re-runs of Gilmore Girls which has been getting a great tone to my day. This weekend I made a batch of Courtney’s Triple Lemon Blueberry Muffins which I have been devouring each morning with a little fruit salad on the side.
For the second time in a row I brought a yogurt with me for a mid morning snack but the day got away from me and I never got to it. I HATE having to throw away food like that, but after a warm day in the classroom, no good. Lunch all week has been boring turkey sandwiches, but they have been smothered in really ripe avocado which always makes them seem more exciting!
Something else that’s been exciting are these new sweet potato crispy chips from Nabisco that I have been snacking on all week. They come in a few varieties and since they were on sale for $2.99 a box I thought I would give them a try. They are the size and consistency of Special K crisps for those of you who have tried them. This kind is a tad sweet for me (you know me and my love of salt!) but I will definitely be buying them again.
3:00 pick me up….
Yes, we are still on a cauliflower kick over here. Idk why it took us so long to catch onto this train but it’s now a produce staple in the Sullivan house. And yes…it’s covered in hot sauce….and yes this is MY plate not Nolan’s. It’s amazing how much he has changed my palate.
We are also clearly hooked on those Hormel pork tenderloins that seem to always be buy one get one free at the grocery store. Teriyaki and mesquite are our two favorites. $6 each?! No wonder we seem to eat this meal once a week.
By the end of the day….8:00ish I am exhausted and falling asleep on the couch, but I still crave a little something sweet before bed. Strawberries and Laughing Cow has been doing the trick recently.
I’m certainly not coming down with scurvy, huh? haha. One of the reasons I enjoy blogging so much is the ability it gives me to reflect. Clearly I need to be working some more veggies into my days and a little less fruit.
